Guide to Brewing Coffee with a Phin Filter

 

The phin filter is a traditional Vietnamese coffee brewing tool, known for its simplicity and ability to produce a strong, flavorful cup of coffee. Here’s how to use it effectively:

Equipment Needed

 

1. Phin filter (includes a brewing chamber, press disc, and lid).

2. Coffee (preferably medium to dark roast for authentic Vietnamese coffee).

3. Hot water (200°F or ~93°C).

4. Cup or mug (wide enough to hold the phin filter).

5. Grinder (if using whole beans).

Step-by-Step Instructions

 

1. Prepare the Coffee

 

Grind Size: Use a medium-coarse grind, similar to sea salt. Too fine, and the water will take too long to pass through; too coarse, and the coffee will brew too weak.

 

1. Set Up the Phin Filter

 

Place the brewing chamber on top of your cup or mug.

 

Add 2 tablespoons (10-15 grams) of ground coffee into the chamber.

 

1. Distribute and Tamp

 

Gently shake the phin filter to level the grounds.

 

Place or screw the press disc down on top of the coffee grounds and lightly press it down. Avoid over-tamping.

 

1. Pre-Wet the Grounds

 

Pour about 1-2 tablespoons of hot water (just enough to cover the grounds) over the coffee.

 

Let it bloom for 30-45 seconds. This helps release carbon dioxide and prepares the coffee for extraction.

 

1. Add the Remaining Water

 

Slowly pour 6-8 ounces (180-240 ml) of hot water into the chamber.

 

Cover the filter with the lid to retain heat.

 

1. Brew and Wait

 

The brewing process takes about 4-6 minutes. You should see coffee dripping steadily into the cup.

 

If the dripping is too fast, the grind may be too coarse; if it’s too slow, the grind is too fine or the press disc is too tight.

 

1. Serve and Enjoy

 

Once the dripping stops, remove the phin filter.

 

Stir and enjoy your coffee black, with sugar, or add condensed milk for the classic Vietnamese iced coffee (Cà Phê Sữa Đá).
